CITRIC ACID
Description
Citric Acid can be used for acidification in wines that are naturally lacking in acid. Â Wines that are too low in acid are flat tasting. Â Citric acid adds liveliness to the wine and helps to bring out a fresher, fruity citrus note on the palate.
It is also used to prevent iron casse. It has complexing power over iron. Added to a wine which contains a few milligrams of iron per liter, it will act with the latter to form a soluble complex.
