- Autolyzes quickly at the end of fermentation resulting in round wines which are malolactic bacteria friendly
- Steady fermentation rate but can be slow towards finish. To mitigate, ensure GO-FERM PROTECT EVOLUTION™ is used during rehydration and wine is mixed during fermentation to keep yeast in suspension
- Saccharomyces cerevisiae cerevisiae strain
- Isolated by the Bureau Interprofessional des Vins de Bourgogne (BIVB), France
